Cassava Curry

Ingredients:

  1. 3 Cassava (approximately 1 kg)
  2. Garlic
  3. Jeera
  4. Methi
  5. Sarso
  6. Salt
  7. Onion
  8. Chillies
  9. Lemon Juice 2 tsp
  10. Coriander leaves
  11. Masala
  12. Tumeric

Method:

  1. Take off the skin and wash the whole Cassava.
  2. Cut the pieces into small cubes (bite size pieces of approximately 1 cm cubes).
  3. Heat oil and splatter in methi.
  4. Let methi get brown, add a few pieces of onion and jeera.
  5. Add garlic and curry leaves when onion starts to get brown.
  6. Fry garlic till it is brown and masala and tumeric.
  7. Add  Cassava pieces and salt and stirr.
  8. Add 1 liter of water.
  9. When  Cassava pieces start to get tender, add lemon juice and cook for a few minutes.
  10. Add coriander leaves and simmer for few minutes.
  11. Fiji Indian style Cassava Curry Recipe is ready
  12. Serve with other food. Yummy with roti or rice.

Cassava is called kasera in Fiji Hindi

Dalo chips with pea besan coating

Ingredients:

  1. Boiled Dalo
  2. Pea Besan 1 cup
  3. Chillies Powder 1/4 tsp
  4. Garlic paste 1 tsp
  5. Tumeric powder (pinch of)
  6. Salt

Method:

  1. Pour pea besan in a bowl and add Chillies, Garlic, Tumeric powder, salt and water and make a thick paste.
  2. Cut Boiled Dalo in chips like shape.
  3. Dip the sliced Dalo  into the pea besan mixture and coat both sides.
  4. Heat oil and fry the coated Dalo untill golden brown on medium heat.
  5. Serve with chutney and tea

Kumala Flavour Gulgula

Ingredients:

  1. Flour 1 cup
  2. Sugar 4 tbsp
  3. Baking Powder 1 tbsp
  4. Elachi powder 1/2 tbsp
  5. Jaifar/ Nutmeg powder 1/4 tsp
  6. Raisin/ Sultana 2 to 4 tbsp
  7. Ghee or butter
  8. Water
  9. Oil to fry 2 to 3 cups
  10. Boiled kumala 2 pieces

Method:

  1. Sieve Flour
  2. Add Baking powder and butter to flour and mix well.
  3. Add water, sugar, elachi, nutmeg and raisins.
  4. Mesh Kumala and add to mixture.
  5. Beat it thoughly with the palm of your hand.
  6. Heat Oil and Pour Boll shaped mixture in the oil.
  7. Fry till golden brown.
  8. Serve with drinks.

Boil Dalo (Fiji Indian)

Ingredients:

  1. Dalo 4 kg
  2. Water
  3. Salt to taste
  4. Sugar 2tbsp

Method:

  1. Peel Dalo and wash it clean.
  2. Cut it into cubes of approximately 2 inches.
  3. Put it in a large pot and pour water. All dalo should be under water.
  4. Add sugar and salt.
  5. Put it over the water and cook till tender.

Note:

  1. Salt and sugar prevents the dalo to be itchy on the tongue.
  2. You can know that the dalo is cooked by taking out a piece and breaking off a chunk from that piece with a fork. If it breaks off easily then its boiled and if its not tender, then its not fully cooked.
  3. If the dalo is not boiled fully, than you can have itchy tongue and neck after you eat it.

Dalo Chips

Ingredients:

  1. Boiled dalo (You can see the boil Dalo Recipes on my site)
  2. Oil/Ghee/ Butter
  3. Salt

Method:

  1. Cup the dalo in chips like shape.
  2. Pour Oil in a fry pan and heat it.
  3. Pour the dalo slice in oil and sprinkle some salt over it.
  4. Deep fry the chips. Cook till golden brown.
  5. Serve with soft drinks, tea, or coffee.

Note:
You can use the following as a dip:

  1. Tomato chutney
  2. Tomato Sauce
  3. Tamrin Chutney

How to make Maggi Noodles Soup

Ingredients:

  1. 1 pkt maggi noodles
  2. 1 Potato
  3. 6 to 8 Bele leaves
  4. 1/2 Onion
  5. 3 clove Garlic
  6. Salt
  7. Chillies (optional)

Method:

  1. Wash the bele leaves and chop it.
  2. Peel the potatoes and cut it in cubes of approximately 2 cm.
  3. Peel the garlic and pound it
  4. Chop the onion.
  5. Pour 4 cups of water in a pot and add bele leaves, potatoes, garlic, onion and salt. Boil this till the potatoes are tender.
  6. Break the maggi noodles into four pieces or as desired and add it to the mixture.
  7. Add the noodles masala is there is any in the packet and cook for 2 minutes.
  8. Serve soup with dalo, cassava, kumala or alone.
  9. Hot soup is nice.
