Banana (Baby Food)

Ingredients:

  1. 1 Ripe Banana

Method:

  1. Take 1 ripe banana and peel off the skin.
  2. Put this banana on a clean plate and mesh it with a fork.
  3. Feed you baby with this meshed banana.

Paw-Paw (Baby Food)

Ingredients:

  1. Pawpaw

Method:

  1. Take 1 fresh ripe Pawpaw and cut it into halves.
  2. Take out all the seeds
  3. Scoop out the orange flesh in a dish.
  4. Mesh the Scooped flesh and feed the baby

Avacado Pear Sandwich

Ingredients:

  1. 1 Ripe Avacado Pear
  2. Bread
  3. Salt to taste
  4. Chillies (Optional)
  5. 1/4 onion finely sliced

Method:

  1. Wash avacado and cut into halfs. Take out the seed inside and peel it. Put the flesh in a dish and mesh it.
  2. Add salt, chillies and chopped onion and mix well.
  3. Put the micture on slices of bread and make a sandwich.
  4. Serve with drinks.

Mango Pickles

Ingredients:

  1. Mangoes (approximately10).
  2. Salt.
  3. Garlic 3 whole.
  4. Masala 4 tbsp
  5. Mustard Oil 2 to 3 cups
  6. Sugar 1 cup
  7. Water 1 1/2 cup
  8. Chillies
  9. Jeera 2tbsp
  10. Methi Powder 2 tsp

Method:

  1. Wash the mangoes and use a sharp knife to cut it into long pieces. Take out the seed.
  2. Add some salt and mix well.
  3. Spread it on a tray and leave it in hot sun for 1 or 2 days. Remember to take it inside the house when there is no sun.
  4. Peel off the skin from garlic and pound the garlic.
  5. Pound the chillies also.
  6. Roast jeera and pound it.
  7. Pour the dried mangoes in a basin and add garlic paste, chilly paste, pounded jeera,  masala, methi powder, salt and 3 tablespoons of mustard oil and mix well
  8. Pour sugar and water in a fry pan and boil in low to medium heat for about 10 minutes.
  9. Pour the syrup mixture on the mango and mix well.
  10. Fill this in an air tight container and pour the remaining oil over the pickles.
  11. Serve with food.

Note:

  1. The mangoes should not be fully ripe. Its should start to get the yellow color to make mango pickles.
  2. The syrup is optional, it can also be skipped.
  3. It is best to add syrup when the pickles are very sour but its ok if the mango was sweet and so is the pickles.
  4. After pounding garlic and chillies put it in hot sun for an hour, this will help to preserve the pickles longer.
  5. Always use a dry spoon or fork to take out pickles from the container. Using hands to take out pickles can make the pickles bad quickly.

Passion Fruit Juice

Ingredients:

  1. 6 fresh ripe passion fruit
  2. 1 jug water
  3. 6 tbsp Sugar
  4. Ice cubes

Method:

  1. Fill the jug with water.
  2. Cut the passion fruits in half and take out the inside juice and seeds.
  3. Use a spoon to separate all the clustered seeds.
  4. Pour the passion fruit seeds and juice in the jug.
  5. Pour sugar and mix well.
  6. Use a strainer to strain out the seeds from the juice if you wish to.
  7. Add ice cubes and serve cold.

Kokoesi Samoa Recipe

Ingredients:

  1. 1 ripe Pawpaw
  2. 1 Dry Coconut

Note: I you do not have the dry coconuts, you can buy a can of coconut milk and a can of coconut juice.

Method:

  1. Cut the Pawpaw in half and take out all the seeds.
  2. With a spoon, scoop out all the pawpaw flesh in a pot.
  3. Husk the Coconut, break the shell and collect all the coconut juice.
  4. Grate the coconut flesh and squeez out all the milk from the flesh. (While squeezing out the milk, you can add half cup of water.
  5. Pour the Coconut juice on the pawpaw flesh, mix and cook it for 6 minutes.
  6. Pour the coconut cream and simmer for 1 minute.
  7. Serve hot.
