Baby Food Avocados

Avocados are very nutritious fruit, it can be served in very appealing and delicious ways.

Avocados provide nearly 20 essential nutrients, including fiber, potassium, Vitamin E, B-vitamins and folic acid. They also act as a “nutrient booster” by enabling the body to absorb more fat-soluble nutrients, such as alpha and beta-carotene and lutein, in foods that are eaten with the fruit.

Ingredients:

  1. 2 to 3 spoons of meshed Avocado.
  2. 1 piece of sliced bread.

 

Method:

  1. You may toast the slice of bread if your kid prefers toasted bread.
  2. Spread the meshed Avocado on the slice of bread.
  3. Serve this sandwich with his/her favorite drink.

Tips:

  1.  The recipe below is fit for babies over six months of age.
  2. Avocados are better than cheese or butter 🙂

Jalebi

Ingredients:

  1.  Maida Flour/ All-Purpose Flour (500 g)
  2. 1 tsp Baking Powder
  3. 1 cup plain Yoghurt
  4. 1 drop Vanilla essence
  5. 2 drops of food colouring
  6. 2 cups ghee for frying (can also use cooking oil)
  7. 4 cardamon pods
  8. Water

Ingredients for Syrup:

  1. 2 cups Water
  2. 2 cups Sugar

Method:

  1. Sieve the flour and mix the baking powder.
  2. Add yoghurt and cardamon to the flour.
  3. Make a batter by adding water.
  4. Cover the batter and set aside for fermenting for a few hours.
  5. Add Vanilla and food colouring to the batter.
  6. Mix the batter well.
  7. Add Sugar and Water in a pot and boil it to make syrup.
  8. Heat oil or ghee in a frypan.
  9. Fill the batter in a kitchen funnel or piping bag and pour it in hot ghee.
  10. Fry both sides of Jalebi on medium heat till crisp.
  11. Pour the hot fried jalebies in syrup to make it sweet. Let it soak the syrup for few minutes.
  12. Remove from syrup and serve. Fresh Jalebies will be nice and crisp.

Note:

  1. If you do not have a kitchen funnel or piping bag than you can use a plastic bag. Make a small hole in a plastic bag, pour the batter in that bag and squeeze it out.
  2. Keep your hand or finger on the exit hole of the bag to prevent it dropping all over the cooking surface.
  3. Pour the batter through the bag hole in  circular motion, starting from a smaller circle and going to larger.
  4. Colour is optional.

Pineapple Pie

In order to make pineapple pies, we first need to bake the crust and than cook the pineapple and custard together and pour it over the crust. Let this cool, slice it into pieces and serve it in a small saucer/dish with a spoon.

Ingredients for Baking Pineapple Pie:

  1. Self-raising flour 2 cups
  2. Sugar 1/1/2 cup
  3. 1/4 pound butter (125 grams)
  4. 1/4 cup warm milk (liquid)
  5. Crushed pineapple 1 tin (275 g to 400 g)
  6. 2 tbsp heaped Custard powder

Method for Baking Pineapple Pie:

  1. Mix self raising flour and butter together.
  2. Add sugar and mix well.
  3. Pour milk and make dough and knead the dough.
  4. Flatten this in a frypan and cook the Pastry dough on number 7 for 30 to 40 minutes.
  5. Cut the pineapple tin and pour it in a pot and add that same amount of water as the pineapple. (Tip: pour the water in the pineapple tin to the brim and add the water to the pot of pineapples.
  6. Boil the Pineapple and water mixture. Add Custard powder.
  7. Pour hot pineapple over the baked crust.
  8. The mouth watering pineapple pie is ready to be served.
  9. You can decorate the top of the pie with banana slices and/or cherries.

Note:

This Pineapple Pie can also be called Pineapple Custard Pie, Pineapple Custard Tart, Pineapple Custard Flan.

Banana Chips

Ingredients:

  1. 2 Bananas (matured unripe)
  2. Oil (to fry)
  3. Salt

Method:

  1. Peel the banana and scrap off  a thin layer.
  2. Thinly slice it into round pieces.
  3. Heat Oil, Add the banana slices when oil is hot.
  4. Deep fry these till Golden brown and crisp.
  5. Fiji Indian style Banana Chips Recipe is ready
  6. Serve with tea, Coffee or juice.

Rock melon Fruit Salad

Ingredients:

  1. Rock melon
  2. Sugar

Method:

  1. Wash the rock melon. Cut into halves and take out the seeds.
  2. Peel off the skin.
  3. Cut it into small cubes.
  4. Pour it in a dish and sprinkle sugar over it.
  5. Put it in the fridge for 2 to 3 hours and serve cold.
  6. You can also serve with ice cream.

Guava Jelly

Ingredients:

  1. Guava sliced 2 cups
  2. Sugar 1/1/2 cup
  3. Water 3 cups
  4. Lemon Juice 2 to 3 tbsp

Method:

  1. Wash the guava
  2. Cut the top and bottom.
  3. Chop the guava into small pieces.
  4. Put guava and water in a pot and boil till guava is tender.
  5. Mesh the boiled guava and strain it.
  6. Put the guava juice back into the pot, add sugar and lemon juice and boil till lumpy.
  7. Cool it and store in a fridge.
  8. Serve with ice cream.

  2. Sugar 2 cup
  3. Water 3 cups
  4. Lemon Juice 1/2 cup

Method:

  1. Wash the guava
  2. Cut the top and bottom.
  3. Peel a thin layer of skin.
  4. Cut the guava into halves and take out the seed area (this is not used)
  5. Chop the remaining guava into small pieces.
  6. Put guava and water in a pot and boil till guava is tender.
  7. Mesh the boiled guava.
  8. Add sugar and lemon juice and boil till lumpy. It should start smelling like jam
  9. Cool it and store in a fridge.
  10. Serve with bread and butter.

Guramba (Mango)

Ingredients:

  1. Jeera
  2. Garlic
  3. Half ripe Mangoes
  4. Chillies
  5. Butter or Ghee
  6. Water
  7. Sugar

Method:

  1. Peel the Mangoes and wash it.
  2. Heat butter and splatter in jeera.
  3. After few seconds add garlic and chillies.
  4. Fry this till garlic is light brown.
  5. Add mangoes and stirr.
  6. After a few seconds, pour in water.
  7. cook till mango is tender.
  8. Add sugar and simmer for a few minutes.
  9. Serve in a dish.

Mango Chutney

Ingredients:

  1. 1 large green mango
  2. Chilly powder
  3. salt to taste
  4. Garlic paste
  5. Coriander leaves

Method:

  1. Wash the mango and peel the skin.
  2. Grate the mango on the fine side of a grater.
  3. Put in a dish and add chilly powder, salt and garlic paste.
  4. Wash coriander leaves and finely chop it.
  5. Add the coriander leaves and mix well
  6. Serve with food.

Alternative method:

  1. Wash the mango and peel the skin.
  2. Wash coriander leaves and finely chop it.
  3. Put all ingredients in the blender and blend well.
  4. Serve with food.

Citrus Jam (Concord Jam)

Ingredients:

  1. Concord Citrus
  2. Sugar
  3. Water

Method:

  1. Pick Fresh concord from the citrus tree, wash it and cut it into small thin slices.
  2. Take out the seeds.
  3. Put the sliced citrus (concord) in a pot and add water. To 1 cup of concord, add 2 cups of water).
  4. Boil this till the pieces are tender and dissolves.
  5. When 2/3 of the mixture is left add 1 1/2 cup of sugar.
  6. Boil in low heat and keep stirring.
  7. When it gets sticky and starts to smell like jam, take it off the fire and let it cool.
  8. Put this in a jar and keep it in a referegerator.
