Homemade Mayonnaise

Homemade Mayonnaise is very cheap and tastes the same as the one we buy from supermarkets. Its also very easy to make.

Ingredients for making Homemade Mayonnaise:

  1.  2 Egg Yolks
  2. 1 cup Cooking Oil
  3. 1/2 Cup Olive Oil
  4. 3/4 tbsp Sugar
  5. 1 tsp Salt
  6. 1 tbsp Lemon Juice or Vinegar

Note: You will need a fork for mixing and a spoon for pouring oil.

Method for making Homemade Mayonnaise:

  1.  Pour the Egg Yolks in a bowl.
  2. Add sugar to the Egg Yolks and mix it for few seconds.
  3. Add all the other ingredients except Oil and mix well.
  4. Add Oil slowly spoon by spoon and mix with a fork.
  5. The Mayonnaise is ready to be served.

Note:

  1.  You can add other spices like Pepper, Paprika, Garlic.
  2. You can spread the Mayonnaise on bread, use it as a dip and eat with chips or fries, serve with boiled potatoes.

Boiled Eggs

Ingredients:

  1. 2 Eggs
  2. 1/1/2 cup water.

Method:

  1. Pour water in the pot.
  2. Put the eggs in the pot.
  3. Boil this for 15 minutes.
  4. Take off the shell and serve.

Tips:

  1. Some people like fully boiled eggs and some like half cooked eggs. The above recipe is for fully boiled eggs.
  2. This can be served with other main course meals, soups, and you can also make sandwiches with this.

Frying Eggs

Ingredients:

  1. 2 eggs
  2. 1/4 onion thinly sliced
  3. pinch of salt
  4. Chopped  chillies
  5. Garlic paste
  6. 1 tbsp Oil

Method:

  1. Break the eggs and pour the inside of it in a dish.
  2. Add sliced onions, salt, chillies and galic to the dish of eggs.
  3. Heat oil in a frypan and pour the mixture in the frypan.
  4. Fry in medium heat till brownish. You can either stirr well while fryng to have the egg in small pieces or fry one side and turn it over and fry the other side to have a large chunk.
  5. Serve with other food. Will be great with dhal and rice or roti.

Egg Curry in Tomatoes

This dish of Egg Curry in Tomatoes is cooked by first boiling the eggs, taking off its shell and frying the whole eggs. Tomatoes are cut and cooked, when the Tomatoes are half cooked, the boiled and fried eggs are added to the Tomatoes and the Eggs and Tomatoes are cooked together to make Egg and Tomato Curry.

Ingredients for making Eggs and Tomato Curry:

  1. 4 eggs
  2. 1 big onion
  3. Garlic 1 tbsp
  4. Ginger 1/4 tsp
  5. 3 tbsp Oil
  6. Salt
  7. Curry leaves
  8. Sarso 1/4 tsp
  9. Jeera 1/4 tsp
  10. Methi 1/5
  11. Tomatoes 1 tin

Method for making Eggs and Tomato Curry:

  1. Boil the Eggs (full cook).
  2. Chop the onion into thin long slices.
  3. Peel the garlic and Ground the garlic.
  4. Peel,wash and ground the Ginger
  5. Take the tomatoes out of the can and cut the chunks in smaller pieces.
  6. Take off the shell from the egg when it is cold enough to do so.
  7. Heat oil and fry the boiled eggs till light brown.
  8. Take out the fried eggs from the oil
    and add few pieces of slices onion in the oil.
  9. Add Sarso jeera, methi and garlic to the frying onion.
  10. Fry it till light brown and add the tomatoes.
  11. Cook this for 3-5 minutes and add the Eggs.
  12. Serve Eggs and Tomato Curry with roti or rice and other food.

Note:

You can either use a tin/can of Tomatoes or you can use fresh tomatoes. Approximately 4 to 6 fresh tomatoes can be added if fresh Tomatoes are used to make Egg and Tomato Curry.

Egg Sandwich

Ingredients:

  1. 4 Eggs
  2. 2 Clove Garlic paste
  3. 1/4 Onion finely diced
  4. Pinch of Salt
  5. Butter 100g
  6. Sliced Bread

Method:

  1. Boil the eggs and take out the shells.
  2. Mesh the eggs.
  3. Add diced Onion, garlic paste, salt, and 4 tsp butter to meshed eggs and mix well.
  4. Butter the bread.
  5. Put egg mixture on the buttered bread and cover it up with another slice.
  6. Serve with brinks.

Tips:

  1. Optional: Sliced cucumber and Sliced Tomatoes.
  2. This can be a very good breakfast menu.
