Citrus Jam (Concord Jam)

Ingredients:

  1. Concord Citrus
  2. Sugar
  3. Water

Method:

  1. Pick Fresh concord from the citrus tree, wash it and cut it into small thin slices.
  2. Take out the seeds.
  3. Put the sliced citrus (concord) in a pot and add water. To 1 cup of concord, add 2 cups of water).
  4. Boil this till the pieces are tender and dissolves.
  5. When 2/3 of the mixture is left add 1 1/2 cup of sugar.
  6. Boil in low heat and keep stirring.
  7. When it gets sticky and starts to smell like jam, take it off the fire and let it cool.
  8. Put this in a jar and keep it in a referegerator.

How to make Suamase (Samoan Recipe)

Ingredients:

  1. Half pkt breakfast crackers biscuits.
  2. 4 cup coconut cream.
  3. 8 cups water.
  4. 1/2 cup sugar.
  5. 5 lemon leaves

Method:

  1. Pour the coconut cream, sugar, water and lemon leaves in a pot and boil for approximately 5 minutes.
  2. When the mixture is boiled, take it off the fire and add the breakfast crackers biscuits and cover it.
  3. Serve after 2 minutes of adding biscuits.

Note:

In Samoan language, Sau means juice and mase means Biscuits

Oka (Tuna Fish) Samoan Recipe

Ingredients:

  1. Fresh Tuna Fish 1000g
  2. Lemon Juice 5 tbsp
  3. Coconut cream 5 cups
  4. 8 Tomatoes
  5. 3 Cucumber
  6. 1 Big Onion
  7. Salt
  8. Iced water 1 cup

Method:

  1. Take out the Fish scales, intestine, head and bones. Wash the fish and cut it in 1 inch cubes.
  2. Slice Tomatoes, cucumber and onions.
  3. Merinate the pieces in lemon juice for 5 minutes.
  4. Add coconut milk, Tomatoes, Cucumber, Onions and Salt. Mix well. The coconut milk should be concentrated and not contain water.
  5. Add iced water and mix well.
  6. Serve with other food.

Lemon Juice

Ingredients:

  1. 1 Fresh Lemon
  2. Sugar 4 tbsp
  3. Water 1 liter
  4. Ice cubes

Method:

  1. Peel the lemon, cut it into halves and squeez out the juice in a bowl.
  2. In a jar, pour water, sugar and 2tsp of lemon juice.
  3. Stirr well till all sugar dissolves.
  4. Add ice cubes and serve in a glass.

Tips:

  1. Peeling the Lemon before squeezing out the lemon juice prevents the lemon juice from getting bitter.
  2. You can use iced water instead of water plus ice cubes if it is inconvinient.
  3. You can add more jemonjuice if you wish to have more sour.
  4. You can take more/less sugar as desired.
