Idli (South Indian Type)

This is a breakfast menu in South India and is famous throughout India.

Ingredients for making South Indian Style Idli:

  1. Baking Powder 1 tsp
  2. 2 cup Uncooked Rice
  3. 1 cup Urdi Dal (White split dal)
  4. 1 cup leftover Cooked rice
  5. Fenugreek seeds (Methi) 5 pcs
  6. Salt 1 tsp

Method for making South Indian Style Idli:

  1. Soak the uncooked rice, urdi dal and methi separately for about four hours.
  2. Blend the urdi dal, rice and methi separately (Pour sufficient water to make it into paste.
  3. Mix the blended ingredients together and leave it for approximately 8 hours (overnight) for fermentation.
  4. In the morning, blend 1 cup last nights leftover rice.
  5. Mix together the fermented rice and urdi dal paste, blended rice, salt and baking powder. Make this into a runny paste (Add more water if required).
  6. Spread some oil on the mould of idli tray.
  7. Fill the idli cooker with enough water for steaming.
  8. Pour the Idli batter into the idli moulds and steam cook the idlis for 10 minutes.
  9. Serve the idlis with Coconut chutney/Peanut Chutney or Sambar.

Scrumbled Eggs

Ingredients:

  1. 2 Eggs
  2. 2 tsp Butter
  3. Salt
  4. Pepper
  5. 2 tbsp milk

Method:

  1. Break the eggs and add salt, pepper and milk to it.
  2. Beat the mixture thoroughly.
  3. Warm a non stick frypan.
  4. Pour the butter and let it melt.
  5. Pour the beaten egg into the frypan and let it cook till the sides are turning solid.
  6. Use a wooden spoon or a spatula, fold the sides into the center. Break the larger pieces into smaller pieces.
  7. When all liquid is dry and it is still moist your scrumbled egg is ready.
  8. Take out the scrumbled egg and serve with toast.

Notes:

  1. Beating the egg incorporates air in the egg. Beating well means fluffier eggs.
  2. Do not use high flame it can burn the egg.

Star Bread

Ingredients:

  1. 4 pieces of sliced bread
  2. 1 to 2 tsp of sugar
  3. 1 Egg
  4. 1 tsp Butter

Method:

  1. Cut the bread into halves
  2. Grease a flat frypan with butter
  3. Assemble the bread on the frypan as shown in the picture.
  4. Put the frypan over low to medium heat.
  5. Break the egg and pour its content over the bread.
  6. Use a spechular to spread the egg evenly over all the pieces.
  7. Sprinkle sugar over the bread.
  8. When the lower side is brown, turn it over.
  9. Cook both the sides till it is brown.
  10. Serve hot with a cup of drink.

Onion Dosa/Dhosa

Ingredients:

  1. 500 grams rice
  2. 250 grams Urdi Dhal/ urd dal
  3. 4 tbsp Ghee
  4. 2 onions
  5. 5 stalks of fresh coriander leaves
  6. Large fresh chillies
  7. 1/4 tbsp Jeera powder
  8. Salt

Method:

  1. Soak the rice and urdi dhal separately overnight.
  2. Blend the soaked dhal and rice and make a smooth paste of light consistency.
  3. Add salt to the mixture, mix it and leave it aside for at least 3 hours.
  4. Take off the onion skin and finely chop the onion into very small cubes.
  5. Rinse the fresh coriander leaves and cut it into very small pieces.
  6. Rinse the chillies and cut it into small pieces.
  7. In a bowl add the onion cubes, coriander pieces, chillies and Jeera Powder and mix it.
  8. Heat a flat pan and grease it with ghee.
  9. Pour a tablespoon of batter thinly on the heated pan and spread it evenly in a circular shape.
  10. Turn over the dosa to cook on the  other side.
  11. Wrap the dosa with  1 tablespoon of Onion, chilly, coriander leaves and Jeera powder mixture.
  12. Serve this hot with coconut chutney.

Maggi Noodles in Vegetables

Ingredients

  1. 1 packet maggi noodles
  2. 1/4  capsicum
  3. 1 clove garlic paste
  4. 1/4 of an eggplant
  5. 1/4 of a carrot
  6. 2 long beans
  7. 1/4 onion
  8. 2 tbsp butter

Method

  1. Use a vegetable peeler to take off the skin of the carrot, wash the carrot and cut it into small pieces.
  2. Take off the onion skin with a knife and cut it into small cubes.
  3. Wash the capsicum, eggplant and beans, cut it into small pieces.
  4. Soak the maggi noodles in hot water for 2 minutes and drain out all the water.
  5. Heat butter and add garlic, eggplant and carrots, fry this till tender.
  6. Add beans and capsicum, stirr for 2 minutes and add maggi noodles and sprinkle the noodles flavour.
  7. Cook for 2 minutes and serve hot on a bed of lettuce.
  8. Fiji Indian style Maggi Noodles Recipe in Vegetables is ready.

Note:

  • If you do not have any one of the above mentioned vegetable you can still make this dish.
  • If you do not like the maggi noodles flavour than you can add salt instead.

Guava Jelly

Ingredients:

  1. Guava sliced 2 cups
  2. Sugar 1/1/2 cup
  3. Water 3 cups
  4. Lemon Juice 2 to 3 tbsp

Method:

  1. Wash the guava
  2. Cut the top and bottom.
  3. Chop the guava into small pieces.
  4. Put guava and water in a pot and boil till guava is tender.
  5. Mesh the boiled guava and strain it.
  6. Put the guava juice back into the pot, add sugar and lemon juice and boil till lumpy.
  7. Cool it and store in a fridge.
  8. Serve with ice cream.

Tomato and Lemon Jam

Ingredients:

  1. Tomatoes 5 large red
  2. Lemon juice 1/2 to 1 cup
  3. Sugar
  4. Water

Method:

  1. Peel the tomatoes.  If the tomatoes are ripe, the skin will come out easily.
  2. Cut the tomatoes in small cubes.
  3. Measure the tomatoes and pour it in a pot. Add equal amount of Water.
  4. Boil this till all tomatoes are disolved and there are no chunks.
  5. Measure the boiled tomatoe and add equal amount of sugar.
  6. Add lemon juice.
  7. Cook this mixture till it is lumpy and smells like jam.
  8. Cool it and pack it in a jar.
  9. Store it in a fridge.
  10. Serve with bread and butter.

Fried egg sandwich

Ingredients:

  1. 2 eggs
  2. 1/4 onion thinly sliced
  3. pinch of salt
  4. Chopped chillies
  5. Garlic paste
  6. 1 tbsp Oil
  7. Sliced Bread

Optional:

  1. Tomatoes Cut in circles
  2. Butter
  3. Mayonnaise
  4. Lettuce
  5. Cucumber
  6. Cheese

Method:

  1. Break the eggs and pour the inside of it in a dish.
  2. Add sliced onions, salt, chillies and galic to the dish of eggs.
  3. Heat oil in a frypan and pour the mixture in the frypan.
  4. Fry in medium heat till brownish. You can either stirr well while fryng to have the egg in small pieces or fry one side and turn it over and fry the other side to have a large chunk.
  5. Take it out of Oil and drain all oil out.
  6. Spread the fried eggs on the bread slice. Make a sandwich
  7. Serve with soft drinks or tea

Citrus Jam (Concord Jam)

Ingredients:

  1. Concord Citrus
  2. Sugar
  3. Water

Method:

  1. Pick Fresh concord from the citrus tree, wash it and cut it into small thin slices.
  2. Take out the seeds.
  3. Put the sliced citrus (concord) in a pot and add water. To 1 cup of concord, add 2 cups of water).
  4. Boil this till the pieces are tender and dissolves.
  5. When 2/3 of the mixture is left add 1 1/2 cup of sugar.
  6. Boil in low heat and keep stirring.
  7. When it gets sticky and starts to smell like jam, take it off the fire and let it cool.
  8. Put this in a jar and keep it in a referegerator.

Porridge (Fiji Indian Style)

Ingredients:

  1. 1/2 cup porridge
  2. 2 – 3 cups liquid milk
  3. 2tbsp Ghee
  4. Sugar

Method:

  1. Heat Ghee in a fry pan and fry porridge till light brown.
  2. Pour liquid milk and sugar and boil for 3-5 minutes.
  3. Serve
