How to keep Food Fresh

Tips to help food from getting bad fast:

  1. Add sour like tamrin juice or lemon juice while cooking. (You only need to add 1/4 tsp)
  2. Adding 1 or 2 tomatoes to the curry while coking.
  3. Store cooked food in cooler temperatures like cooler.
  4. Fried items, which does not contain liquid will not get bad fast.
  5. Use a clean and dry spoon to take out food.
  6. While transfering food from 1 bowl to another, make sure that the bowl to which you are transfering is clean and dry.

How to make rice in a pressure cooker

Ingredients:

  1. 2 cups rice
  2. 4 cups water

Method:

  1. Pour the 2 cups rice in a bowl and rinse it.
  2. Transfer the washed rice into the pressure cooker.
  3. Pour 4 cups of water in the pressure cooker.
  4. Close the cooker and put it on the store.
  5. Cook this in high heat till the whistle blowing gets stable.
  6. Switch off the flame and leave it without taking out the pressure. Let the pressure escape by itself.

Notes:

  1. The above recipe was cooked in hawkins futura pressure cooker.
  2. White ordinary rice was used.
  3. This method of cooking rice will save your gas and electricity.

How to make self raising flour from all purpose flour

Ingredients:

  1. 2 cups all purpose normal flour or maida
  2. 3 teaspoons of Baking powder
  3. Pinch of salt

Method:

  1. Pour all these ingredients in a bowl and mix well with a spoon.
  2. Sieve this 3 times.

You can use this home made self raising flour to make sweets, pastries, savories, cakes etc

Cooking Rice

If you do not have a rice cooker or maybe the electricity is off and you wish to cook rice. You can cook it in a pot using the following method. People used to cook rice the following way when rice cooker was not invented.

Ingredients:

  1. Rice 1 cup
  2. Water 3 to 4 cups

Method:

  1. Pour the rice in a pot, pour water and wash the rice.
  2. Fill water in the rice pot and boil it till the rice is tender.
  3. Drain out excess water.
  4. Simmer this on very low flame for 1 minute.
  5. The rice is ready to be served.

Fried Peanuts

Ingredients:

  1. 500 grams Fresh Peanut Seeds
  2. Salt
  3. Pinch of Red Chilly Powder
  4. Pinch of Garlic Paste
  5. Oil/Butter to fry

Method:

  1. Heat oil in a frypan.
  2. Pour the peanut seeds in the hot oil and fry it till crisp.
  3. Add salt, chilly powder and garlic paste and  mix well.
  4. Serve with tea or any other drinks.

Note:

  1. Drain out all oil from the peanuts.
  2. Store the leftover peanuts in an airtight container.

Peanuts (Roasted)

Ingredients:

  1. 1/2 cup Peeled Fresh Peanuts
  2. Pinch of Salt
  3. 1 tbsp water

Method:

  1. Pour the Fresh peeled Peanuts in a frypan and switch on the stove with low flame.
  2. Mix the salt in water and dissolve it. Pour the salt water into the frypan.
  3. Keep stirring the peanuts for about 15 to 20 minutes till crunchy.
  4. Serve the peanuts with tea.

Notes:

  1. If flame is high, the peanuts will get burnt and some parts wont be cooked.
  2. It is best to be served the same day but can be kept for many days if stored in an airtight container.

Boiled Eggs

Ingredients:

  1. 2 Eggs
  2. 1/1/2 cup water.

Method:

  1. Pour water in the pot.
  2. Put the eggs in the pot.
  3. Boil this for 15 minutes.
  4. Take off the shell and serve.

Tips:

  1. Some people like fully boiled eggs and some like half cooked eggs. The above recipe is for fully boiled eggs.
  2. This can be served with other main course meals, soups, and you can also make sandwiches with this.

Coconut oil

Ingredients:

  1. Coconuts
  2. Water 8 litres

Method:

  1. Unhusk the coconuts.
  2. Break the coconut into half and take out the water.
  3. Use the coconut scrapper to finely grate the flesh.
  4. Pour water and squeeze out the coconut milk .
  5. Strain the coconut milk.
  6. Pour the coconut milk in a bucket and leave it overnight.
  7. When oil comes to the top, collect it in a pot with your hands.
  8. Put the pot of raw oil over the fire and cook it till its golden brown and starts giving the coconut oil aroma.

If you wish to make this long process short than you can use the following method:

Steps 1, 2, 3, 4, 5, and 8 The second method gives out more coconut smell than the first one.
but the second method requires far less water than the first method.
If you add more water to the second method than it will take more time to cook because it will take time for the water to evaporate.

Cooking Fresh Corn

Ingredients:

  1. Fresh corn 10
  2. salt
  3. sugar 2tbsp
  4. water

Method:

  1. Take off the corn skin and hairs. Take out any infected area.
  2. Wash the corn and put it in a pot.
  3. Fill the pot with water, all the corn should be under water.
  4. Put this on stove and boil in medium to high heat.
  5. When it starts boiling, add salt and sugar.
  6. Boil till corn is tender enough to be eaten.
  7. Serve with tea or any other drink.

Note:

The fresher the corn, the tastier it will be.

Avacado Pear Sandwich

Ingredients:

  1. 1 Ripe Avacado Pear
  2. Bread
  3. Salt to taste
  4. Chillies (Optional)
  5. 1/4 onion finely sliced

Method:

  1. Wash avacado and cut into halfs. Take out the seed inside and peel it. Put the flesh in a dish and mesh it.
  2. Add salt, chillies and chopped onion and mix well.
  3. Put the micture on slices of bread and make a sandwich.
  4. Serve with drinks.
