Chicken Cutlets/Patties

One of my favorite appetizers is Chicken cutlets. This is made with minced chicken, boiled and meshed potatoes, onions, garlic, ginger, cilantro/coriander leaves, chicken masala, pepper and salt to taste. The cutlet pieces is dipped in egg and dunked in breadcrumbs and fried in oil.

Ingredients for cooking Chicken cutlets:

  1.  Boneless chicken 1 cup
  2. Boiled and Meshed potatoes 1 cup
  3. 1 medium sized Onion
  4. 1 Stalk of Coriander leaves
  5. 1 tsp Chicken Masala
  6. 2 large chillies
  7. 1/4 tsp Pepper
  8. Salt to taste
  9. 1 to 2 eggs
  10. 1 cup Bread Crumbs
  11. Oil to fry

Method for cooking Chicken Cutlets:

  1. Rinse the chicken and cut it into pieces.
  2. Boil the chicken in 1/2 up of water. Add salt while boiling and boil till all water is evaporated.
  3. Let the boiled chicken get cool while you prepare other things.
  4. Take off the onion skin and cut it into pieces.
  5. Rinse the coriander leaves and cut it into chunks.
  6. Put the boiled chicken in a blender, add the onions, coriander leaves, masala, chillies and pepper. Blend all these ingredients till the meat is minced.
  7. Take out the minced chicken from the blender and mix the meshed potatoes and more salt if salt is needed.
  8. Break off little chunks off the chicken and potato mix and make round pieces, fatten it. Make many such round and flat pieces.
  9. Break 1 egg, beat it in a bowl and keep it aside.
  10. Pour the breadcrumbs in a dish and keep it aside.
  11. Heat oil in a fry pan.
  12. Dunk these pieces of cutlets into the beaten egg, and transfer it to the bread breadcrumbs. Pat both the sides of chicken cutlets with breadcrumbs.
  13. Fry the Chicken cutlets in oil.
  14. Serve the Chicken cutlets with a dip and a cup of drink.

How to make Ice Cream at Home from Ice-cream Mix Powder

Ingredients for Home made ice-cream using Ice-Cream Mix Powder:

  1. 1 Packet ice-cream mix powder (Weikfield Brand)
  2. 1/2 litre of milk

Method for Home made ice-cream using Ice-Cream Mix Powder:

  1. Set the refrigerator to the highest temperature 1/2 hour before preparing the ice-cream.
  2. Pour the content of the ice-cream mix packet in the milk.
  3. Bring to a boiling and simmer for 2 minutes.
  4. Pour the mixture in an aluminum tray (I use my cake baking tray). It should not be very thick no more than 25mm.
  5. Put the tray in the freezing section of the refrigerator for 2 hours.
  6. Take the tray out of the refrigerator, break the ice-cream into chunks with a spoon
  7. Put the ice-cream into a mixie  and blend it till smooth.
  8. Pour the Ice-cream in a plastic container and cover it with lid.
  9. Put the ice-cream container back into the freezing section of the refrigerator.
  10. Serve with Jelly or Fruits or Custard in small dishes with a spoon.

I love to make this ice cream and serve it to my guests and tell them that i made it at home……..It’s Yummy and amazing.

How to Make Jelly from Jelly Mix Powder

I have used the Strawberry flavor of Jelly Mix Powder from Weikfield

Ingredients for making eating Jelly from Jelly Mix Powder:

  1. 1 Packet Weikfield Jelly Mix Powder (90g)
  2. 1/2 Litre Water

Method for making eating Jelly from Jelly Mix Powder:

  1. Boil the water.
  2. Pour the ingredients from the packet in a dry bowl.
  3. Mix the ingredients in the bowl.
  4. Pour the water over the Jelly Mix Powder.
  5. Mix it with a spoon till all powder is dissolved.
  6. Let it cool for 30 minutes.
  7. Put this in a cooler and serve the jelly cold.

The Jelly is yummy when served with ice cream. Jelly and ice-cream can be a nice treat for kids.

How to heat yesterday’s leftover Rice

Many times after dinner we discover that there is some rice left. This rice can be served the next day after storing it in refrigerator. This leftover rice can be heated and served the next day but the question is how to heat this leftover rice.

I have seen people putting the rice in a pot and heating on the stove, at times the rice gets burnt while heating it this way. I have also seen that some people add water, boiling it and draining the water. This method is also not perfect because the taste of the rice changes.

The best way best way to heat rice is to steam it.

  1. Take 2 pots of different sizes (make sure that the smaller one easily fits inside the bigger pot)
  2. Put the leftover rice in the smaller pot.
  3. Pour 1 cups of water in the bigger pot.
  4. Put the smaller pot inside the bigger pot.
  5. Steam this on the stove for a few minutes.

Note:

Before storing the rice in the refrigerator, I usually separate the grains. This helps to steam easily.

Homemade Mayonnaise

Homemade Mayonnaise is very cheap and tastes the same as the one we buy from supermarkets. Its also very easy to make.

Ingredients for making Homemade Mayonnaise:

  1.  2 Egg Yolks
  2. 1 cup Cooking Oil
  3. 1/2 Cup Olive Oil
  4. 3/4 tbsp Sugar
  5. 1 tsp Salt
  6. 1 tbsp Lemon Juice or Vinegar

Note: You will need a fork for mixing and a spoon for pouring oil.

Method for making Homemade Mayonnaise:

  1.  Pour the Egg Yolks in a bowl.
  2. Add sugar to the Egg Yolks and mix it for few seconds.
  3. Add all the other ingredients except Oil and mix well.
  4. Add Oil slowly spoon by spoon and mix with a fork.
  5. The Mayonnaise is ready to be served.

Note:

  1.  You can add other spices like Pepper, Paprika, Garlic.
  2. You can spread the Mayonnaise on bread, use it as a dip and eat with chips or fries, serve with boiled potatoes.

Homemade Peanut Butter

Ingredients for making Peanut Butter at Home :

  1. 1 cup Peanuts
  2. 1 tsp Honey or sugar
  3. 1/4 tsp Salt
  4. 3 tsp Peanut Oil

Method for making Peanut Butter at Home:

  1. Pour All Ingredients in the blender and blend it smooth.
  2. Store in an airtight bottle.

Note:

  1. Use for 2 months.
  2. You can also make other nut spread in a similar manner.
  3. Peanut Butter can also be called by some people as Peanut Spread, pindakaas (peanut cheese).

When i was young, i used to think that Peanut Butter may be some advanced formula. I have never imagined that Peanut Butter could be so easy to make and all the ingredients will be so readily available and cheap.

You can use it as a spread on your favorite biscuits or bread……..its yummy.

Scrumbled Eggs

Ingredients:

  1. 2 Eggs
  2. 2 tsp Butter
  3. Salt
  4. Pepper
  5. 2 tbsp milk

Method:

  1. Break the eggs and add salt, pepper and milk to it.
  2. Beat the mixture thoroughly.
  3. Warm a non stick frypan.
  4. Pour the butter and let it melt.
  5. Pour the beaten egg into the frypan and let it cook till the sides are turning solid.
  6. Use a wooden spoon or a spatula, fold the sides into the center. Break the larger pieces into smaller pieces.
  7. When all liquid is dry and it is still moist your scrumbled egg is ready.
  8. Take out the scrumbled egg and serve with toast.

Notes:

  1. Beating the egg incorporates air in the egg. Beating well means fluffier eggs.
  2. Do not use high flame it can burn the egg.

Lamb Chops and Sausages Barbecue (BBQ)

Ingredients:

  1. 1 Kg Lamb Chops (BBQ Pieces)
  2. 2 tbsp Ginger (paste)
  3. 2 tbsp Garlic (Paste)
  4. 100 ml Dark Soy sauce
  5. 500 grams Sausages
  6. Cooking Oil (for the BBQ Pan)
  7. 1 tbsp green Chilly paste (Optional)

Method:

  1. Defrost the BBQ Chops and Sausages.
  2. Wash/Rinse the Chops and Sausages.
  3. Diagonally slice the Sausages into halves (so that flavor gets soaked in while marinating).
  4. Marinate the chops and Sausages in sauce, ginger and garlic  for about 30 minutes.
  5. Heat the BBQ Pan and Smear it with oil.
  6. Cook the Marinated Chops and Sausages over the Hot BBQ pan.
  7. Use tongs to turn the meat while cooking (Cook both sides well).
  8.  Serve with dalo/cassava/kumala and tomato sauce and Salad.

Chicken Soup with Vegetables

Ingredients:

  1. 1 kg Chicken
  2. 1 Potato
  3. 1/2 Onion
  4. 3 clove Garlic
  5. 1/4 Capsicum
  6. 1 Carrots
  7. 4 Beans
  8. 1 Eggplant
  9. Salt
  10. 1 Tomato
  11. 1 cup coconut milk/cream

Method:

  1. Use a vegetable peeler to take off the skin of the carrot, wash the carrot and cut it into small pieces.
  2. Peel the potatoes and cut it into pproximately 2 cm cubes and rinse it.
  3. Wash the capsicum, eggplant and beans, cut it into small pieces.
  4. Peel the garlic and pound it
  5. Chop the onion.
  6. Chop the chicken meat in bite size pieces and rinse it.
  7. Pour 4 cups of water in a pot and add, potatoes, garlic, onion, capsicum, carrots, beans, chicken, eggplant, tomato and salt. Boil this till the potatoes are tender.
  8. Add the coconut cream/milk it to the mixture simmer for 2 minutes.
  9. Serve soup with dalo, cassava, kumala or alone.
  10. Hot soup is nice.

Notes:

You can even add the maggi noodles and it will be Chicken soup with vegetables and maggi noodles.

Optional: Bele leaves, Chillies

Maggi Noodles and Vegetable Soup

Ingredients:

  1. 1 pkt maggi noodles
  2. 1 Potato
  3. 1/2 Onion
  4. 3 clove Garlic
  5. 1/4 Capsicum
  6. 1 Carrots
  7. 4 Beans
  8. 1 Eggplant

Method:

  7. Break the maggi noodles into four pieces or as desired and add it to the mixture.
  8. Add the noodles masala is there is any in the packet and cook for 2 minutes.
  9. Serve soup with dalo, cassava, kumala or alone.
  10. Hot soup is nice.

Notes:

If you do not like the maggi noodles flavour than you can add salt instead.
