Kerela/Malabar style Ghee Rice or Neychoru

Neychoru is rice fried with spicies in ghee. It is a semi Biriyani made in Malabar/ Kerela. I love to eat neychoru with gravy meat curry like Goat or Chicken curry. But this can also be served with vegetarian curries. Neychoru is a Malayalam word meaning ghee rice. Ney means ghee and Choru means rice in Malayalam.


Ingredients for Cooking Neychoru or Ghee Rice:

  1. Basmati rice 2 cups
  2. Water 4 cups
  3. 1 Onions
  4. Garlic Paste 1/2 tsp
  5. Ginger paste 1 tbp
  6. Ghee 4 tbsp
  7. Cinnamon sticks 2 inches long
  8. Cardamon 4 pcs
  9. Black Pepper Powder 1/4 tsp
  10. Chillies cut into pieces 2
  11. Bay leaves/Tespatta 4 -5 leaves
  12. Sarso 1/4 tsp
  13. Jeera 1/4 tsp
  14. Salt as desired
  15. Fresh Coriander Leaves

For Garnishing Neychoru or Ghee Rice:

  1.  Raisins 1/4 cup
  2. 2 Onions
  3. Cashew nuts 1/4 cup
  4. 4 tbsp ghee/oil

Method for Cooking Neychoru or Ghee Rice:

  1. Thinly slice the onions.
  2. Rinse and cut the Coriander leaves into small pieces.
  3. Break the Cinnamon stick into smaller pieces.
  4. Grind the cardamons in a mortar.
  5. Rinse the rice, drain the water and keep it aside.
  6. Heat the ghee in a cooker and splatter in sarso, let it spout.
  7. Add sliced onions, jeera, cinnamon, cardamon, ginger paste, garlic paste, black pepper, bayleaves and chillies. Stir while frying, fry till onions are slightly brown.
  8. Add the washed rice, salt, coriander leves and stir.
  9. Add 4 cups of water stir and close the cooker lid.
  10. Let the neychoru cook till rice is tender.

Method for preparing Garnishing for Neychoru or Ghee Rice:

  1. Thinly slice the Onions.
  2. Heat ghee and fry the sliced onions till brown.
  3. Take out the onions and fry the cashews till slightly brown.
  4. Take out the cashews and fry the Raisins.
  5. Sprinkle the fried onions, Cashews and raisins over the cooked neychoru.
  6. Mix the neychoru and serve with gravy meat.

Chicken Cutlets/Patties

One of my favorite appetizers is Chicken cutlets. This is made with minced chicken, boiled and meshed potatoes, onions, garlic, ginger, cilantro/coriander leaves, chicken masala, pepper and salt to taste. The cutlet pieces is dipped in egg and dunked in breadcrumbs and fried in oil.


Ingredients for cooking Chicken cutlets:

  1.  Boneless chicken 1 cup
  2. Boiled and Meshed potatoes 1 cup
  3. 1 medium sized Onion
  4. 1 Stalk of Coriander leaves
  5. 1 tsp Chicken Masala
  6. 2 large chillies
  7. 1/4 tsp Pepper
  8. Salt to taste
  9. 1 to 2 eggs
  10. 1 cup Bread Crumbs
  11. Oil to fry

Method for cooking Chicken Cutlets:

  1. Rinse the chicken and cut it into pieces.
  2. Boil the chicken in 1/2 up of water. Add salt while boiling and boil till all water is evaporated.
  3. Let the boiled chicken get cool while you prepare other things.
  4. Take off the onion skin and cut it into pieces.
  5. Rinse the coriander leaves and cut it into chunks.
  6. Put the boiled chicken in a blender, add the onions, coriander leaves, masala, chillies and pepper. Blend all these ingredients till the meat is minced.
  7. Take out the minced chicken from the blender and mix the meshed potatoes and more salt if salt is needed.
  8. Break off little chunks off the chicken and potato mix and make round pieces, fatten it. Make many such round and flat pieces.
  9. Break 1 egg, beat it in a bowl and keep it aside.
  10. Pour the breadcrumbs in a dish and keep it aside.
  11. Heat oil in a fry pan.
  12. Dunk these pieces of cutlets into the beaten egg, and transfer it to the bread breadcrumbs. Pat both the sides of chicken cutlets with breadcrumbs.
  13. Fry the Chicken cutlets in oil.
  14. Serve the Chicken cutlets with a dip and a cup of drink.

Côtelette in French, Kotleta in Russian language and cotoletta orKotelett  in various languages

Baby Food Avocados

Avocados are very nutritious fruit, it can be served in very appealing and delicious ways.

Avocados provide nearly 20 essential nutrients, including fiber, potassium, Vitamin E, B-vitamins and folic acid. They also act as a “nutrient booster” by enabling the body to absorb more fat-soluble nutrients, such as alpha and beta-carotene and lutein, in foods that are eaten with the fruit.




  1. 2 to 3 spoons of meshed Avocado.
  2. 1 piece of sliced bread.



  1. You may toast the slice of bread if your kid prefers toasted bread.
  2. Spread the meshed Avocado on the slice of bread.
  3. Serve this sandwich with his/her favorite drink.


  1.  The recipe below is fit for babies over six months of age.
  2. Avocados are better than cheese or butter 🙂

How to make Ice Cream at Home from Ice-cream Mix Powder

Ingredients for Home made ice-cream using Ice-Cream Mix Powder:

  1. 1 Packet ice-cream mix powder (Weikfield Brand)
  2. 1/2 litre of milk

Method for Home made ice-cream using Ice-Cream Mix Powder:

  1. Set the refrigerator to the highest temperature 1/2 hour before preparing the ice-cream.
  2. Pour the content of the ice-cream mix packet in the milk.
  3. Bring to a boiling and simmer for 2 minutes.
  4. Pour the mixture in an aluminum tray (I use my cake baking tray). It should not be very thick no more than 25mm.
  5. Put the tray in the freezing section of the refrigerator for 2 hours.
  6. Take the tray out of the refrigerator, break the ice-cream into chunks with a spoon
  7. Put the ice-cream into a mixie  and blend it till smooth.
  8. Pour the Ice-cream in a plastic container and cover it with lid.
  9. Put the ice-cream container back into the freezing section of the refrigerator.
  10. Serve with Jelly or Fruits or Custard in small dishes with a spoon.

I love to make this ice cream and serve it to my guests and tell them that i made it at home……..It’s Yummy and amazing.

How to Make Jelly from Jelly Mix Powder

I have used the Strawberry flavor of Jelly Mix Powder from Weikfield


Ingredients for making eating Jelly from Jelly Mix Powder:

  1. 1 Packet Weikfield Jelly Mix Powder (90g)
  2. 1/2 Litre Water

Method for making eating Jelly from Jelly Mix Powder:

  1. Boil the water.
  2. Pour the ingredients from the packet in a dry bowl.
  3. Mix the ingredients in the bowl.
  4. Pour the water over the Jelly Mix Powder.
  5. Mix it with a spoon till all powder is dissolved.
  6. Let it cool for 30 minutes.
  7. Put this in a cooler and serve the jelly cold.

The Jelly is yummy when served with ice cream. Jelly and ice-cream can be a nice treat for kids.

Ingredients for cooking Cauliflower/ Phul/Phool Gobhi Curry:

  1. 1 medium sized cauliflower
  2. 1 tbsp peanut seeds
  3. 3 tbsp cooking Oil
  4. 1/2 tsp Jeera
  5. 5 seeds Methi
  6. 1/2 tsp Sarso
  7. Salt to tasta
  8. Turmeric
  9. 1 stalk Tespatta
  10. 3 green Chillies chopped into 1 cm pieces
  11. Coriander Leaves
  12. Garlic Paste 1tsp
  13. Ginger Paste 1/2 tsp
  14. 1 Onion cut into thin long slices
  15. 2 Red Tomatoes cut into pieces

Method for cooking Cauliflower/ Phul/Phool Gobhi Curry:

  1. Rinse and cut the cauliflower into 1/1/2 cm pieces.
  2. Rinse the coriander leaves and chop it into pieces.
  3. Heat oil in a frypan.
  4. splatter in  sarso, it will start to pop. Add in the Methi and jeera.
  5. Add the peanuts and stir.
  6. After 2 seconds, add the chopped onion, Garlic Paste, Ginger Paste and tespatta and stir.
  7. when the onion is light brown, add the chopped Cauliflower.
  8. Add salt, turmeric and tomatoes and stir.
  9. Add 1 glass of water and let it cook on low to medium heat.
  10. When all water is evaporated, it will be cooked.
  11. Serve the Cauliflower/ Phul/Phool Gobhi curry with roti.

How to save on Cooking Gas in the Kitchen

Simple and Easy Tips  to save on the cost of Kitchen Fuel:


  1. Use Pressure Cook instead of pot  where necessary. Because heat does not escape easily. It also takes lesser time for cooking in a Pressure Cooker.
  2. Close the lid while cooking will stopping heat from escaping. Cooking without lid will lead to longer time to reach boiling point and more fuel will be used up.
  3. Have the cooking ingredients ready (example cut the vegetables, pound the garlic) and within reach before you light up the fire for cooking.
  4. Heat Water in an electric jug (drinking water and bathing) instead of pot.
  5. Do not use a large sized stove burner for cooking on a small pot. The pan size should match with stove size.
  6. After finish cooking, turn off the gas cylinder so that no gas can escape and to be safe.
  7. Some people forget that they kept something for cooking/boiling on the stove. At times the item gets overcooked or burnt. They should be alert and not forget that they left food on the stove for cooking. This can save a lot.
  8. Little amount of food should be cooked in a smaller pot than a very large pot. Smaller vessel cooks faster with a lid on.

How to heat yesterday’s leftover Rice

Many times after dinner we discover that there is some rice left. This rice can be served the next day after storing it in refrigerator. This leftover rice can be heated and served the next day but the question is how to heat this leftover rice.


I have seen people putting the rice in a pot and heating on the stove, at times the rice gets burnt while heating it this way. I have also seen that some people add water, boiling it and draining the water. This method is also not perfect because the taste of the rice changes.


The best way best way to heat rice is to steam it.

  1. Take 2 pots of different sizes (make sure that the smaller one easily fits inside the bigger pot)
  2. Put the leftover rice in the smaller pot.
  3. Pour 1 cups of water in the bigger pot.
  4. Put the smaller pot inside the bigger pot.
  5. Steam this on the stove for a few minutes.


Before storing the rice in the refrigerator, I usually separate the grains. This helps to steam easily.

Homemade Mayonnaise

Homemade Mayonnaise is very cheap and tastes the same as the one we buy from supermarkets. Its also very easy to make.


Ingredients for making Homemade Mayonnaise:

  1.  2 Egg Yolks
  2. 1 cup Cooking Oil
  3. 1/2 Cup Olive Oil
  4. 3/4 tbsp Sugar
  5. 1 tsp Salt
  6. 1 tbsp Lemon Juice or Vinegar

Note: You will need a fork for mixing and a spoon for pouring oil.

Method for making Homemade Mayonnaise:

  1.  Pour the Egg Yolks in a bowl.
  2. Add sugar to the Egg Yolks and mix it for few seconds.
  3. Add all the other ingredients except Oil and mix well.
  4. Add Oil slowly spoon by spoon and mix with a fork.
  5. The Mayonnaise is ready to be served.


  1.  You can add other spices like Pepper, Paprika, Garlic.
  2. You can spread the Mayonnaise on bread, use it as a dip and eat with chips or fries, serve with boiled potatoes.

Fried Rice (Fiji Indian Style)

This recipe of fried rice below is different from the Chinese Fried Rice. This fried rice is usually made with the leftover rice to make the meal interesting. Its adding some flavor to the leftover boring rice, to make food more tastier.


Ingredients for making Fiji Indian Style Fried Rice:

  1. Leftover cooked rice (enough to serve approximately 2 people)
  2. Garlic and Ginger Paste 1 tsp
  3. Salt to taste
  4. Oil/Ghee or Butter 2 tbsp
  5. 1 Onion

Method for making Fiji Indian Style Fried Rice:

  1. Separate the grains of rice (it should not be sticking to each other).
  1. Cut the onion into long thin slices.
  2. Heat the Oil.
  3. Add Onion and Garlic in hot oil and stir.
  4. When Onion starts to get light brown, add the Rice.
  5. Sprinkle Salt and stir.
  6. Cook this for about 3 to 5 minutes and serve with Curry.

I like this rice with dhal, chutney and some side dishes. I have seen some people adding few seeds of Sarso and Jeera in step 4.
